Jemily’s Ginger Mojito

This is our first cocktail recipe, and we’re really excited. A friend made us Mojitos on the 4th of July, and we enjoyed them so much, that we got the itch to make them again this weekend.

Jemily’s Ginger Mojito –

For this cocktail recipe you will need:

Ginger Simple Syrup (makes 1/2cup of syrup, each cocktail uses 1T of syrup).

1/2 cup water

1/2 cup sugar

1 2-inch piece ginger (optional)

Other cocktail ingredients

we prefer a dark rum, but you can definitely use white rum or even lime or coconut flavored

1ounce or 2T spiced rum (we bought a bottle of Cruzan Rum, which is a really tasty rum and is a pretty reasonable price).

1 lime

4-6mint leaves

1ounce or 2T club soda (you could also use ginger ale)

To make the simple syrup, combine 1/2 cup of sugar, 1/2cup of water, and peeled and sliced ginger.

Jay showed me a really neat way of peeling ginger, used the dull side of a knife. It peels off the skin really easily and doesn’t waste any of the ginger like if you used a vegetable peeler or the sharp edge of a knife.

Bring the mixture to a boil and make sure the sugar is completely dissolved. Once the syrup is clear turn off the heat, and let it cool. Before you make our mojito, the simple syrup needs to be completely cooled, so transfer the syrup to a heat-safe container and put it in the fridge or freezer (just don’t let it freeze solid!).

To make one cocktail:


In a glass, combine 1T of Ginger Simple Syrup with 1 lime wedge (we really like lime and used 1/4 of a lime in each cocktail but you can use as much or as little as you like), and 4-5 mint leaves. Smash them together using a muddler, if you have one. We don’t have a muddler, so we put these ingredients in a bowl, tore up the mint leaves, and used a series of smooshing and poking movements with a fork and spoon. (You could probably also use a fork to get all of the juice and a little pulp from the lime and just tear your mint leaves into the glass). Then we poured the mixture into a glass.

After the mixture was muddled, we filled our glasses with ice to make sure our drinks would be super cold.

Then add in 1ounce or 2T of rum.


The last step is to add 1ounce or 2T of club soda to give a fizzy kick. This drink is very refreshing and great for summer. If you don’t want ginger simple syrup, you can leave out the ginger and just make a plain simple syrup sweetener. You can also leave out the simple syrup and just add a little granulated sugar to the muddling step. Enjoy!
